So, it’s been a long time since I have put up a post about my journey on Trim Healthy Mama. Mostly because I wasn’t fully on it! Not until the last 3-4 weeks have I totally switched back and find it to be one of the best decisions I have made!
I have to laugh because everytime I start this I encourage 3-5 people to join me on the journey. And so it’s happening again, but I am sticking to it!
I don’t know if I told you I was pregnant? Yep. Around 20 weeks right now. And in that time I was told if I could change my eating, I wouldn’t probably have to go on insulin. And when I am fully on plan, taking metaformin as well, my sugars are great. But I was running low yesterday and ate something I shouldn’t (regretfully) and my sugars this morning were a lot higher.
It doesn’t really take much. And feeling like I have to sleep because my sugar is to high is the worst feeling. So better to just stay on plan then mess with this. Do you agree?
Anyways, I have had the Trim Healthy Mama Cookbook: Eat Up and Slim Down with More Than 350 Healthy Recipes for awhile and finally re-pulled it out and made a menu. Well, sort of. More like a list of meals I would like to try.

I made the this without the spaghetti for church Eat In Sunday and it was great! I enjoyed it and a couple of people asked me about it. So easy to make! There was none left when I went home! That is always a good sign, don’t you agree?

That reminds me I need to do that today!! I had put it in the freezer and pulled it out last night…still working on the whole freeze your food and take it out a day early thing…I guess I should have taken it out in the morning?

I made these last night and most of my kids and family ate these up. My husband said it pretty much tasted like meatballs and gravy. Who could go wrong with that? Only one complainer in the bunch, but most of this was eaten except for maybe 3 meatballs. I decided to make the meatballs (not cooked) and use my cookie scooper to make the next batch for next week and stick it in the freezer. Why I didn’t think of that when I first made the meatballs, I will never know, but now I have it set to try it. 🙂
Cashew Chicken Skillet Meal pg 65
I have been craving Chinese food and this is one of the recipes I saw! Except my family has already eaten all the cashews and I couldn’t find fish sauce when I went shopping last, though I do have all the rest of the ingredients. 🙂 So hopefully I can get some more cashews and find fish sauce and get a chance to try this! Someday…
I also made a list of breakfast items I would like to try but haven’t done any yet.
And then there are always desserts. Who doesn’t like to have dessert?
*Mint Chocolate Truffle Cake pg 303
Oh my goodness, I was so happy with this cake. I had it for about 3-4 days and ate a piece or two every day. It satisfied that mint flavor that I love, and even though I messed up a tiny bit, it was good. Actually, my son asked if he could have this for his birthday cake. If I have all the ingredients, I may just do that, but I think only two other people out of my family enjoyed the cake, but my Mom absolutely loved it. I have to tweak it and make it work, but it was good for what I needed it for. 🙂
*Double Peanut Fudge Swirl Brownies pg 315
These were good, though definitely taste better if you let them cool down completely! I was so hungry, though, I had to have some when they came out of the oven. I think I am working on these. I brought these to church and some people liked them. My husband said this is a recipe he likes. He is kind of my guinea pig at times, no offense, because he doesn’t like tons of “healthy foods”. Especially if I were to tell him what’s in some things. 😉 So, he tests things and shakes his head no or yes, and this thing, he almost ate half of it!
*Bust-A-Myth Banana Cake pg 298
I just made this today. I like it enough to probably make it again, but at the same time, I am slightly worried about the bananas. Bananas and gestational diabetes don’t always go hand in hand so I will take my blood sugar and see what it does to me. If it gets to high, this will be off my list, at least until the baby comes out. Otherwise, this was a nice change. I needed something that was an E recipe because I haven’t been able to get to the store to buy Ezekiel bread, which is usually my one way to have a definite E meal throughout the day. My kids are just now slowly waking up, so I won’t know all of their reactions to this cake yet. So far monkey had two pieces, so guess he enjoyed it!
I think out of the book that is all I’ve made. I do have a list of breakfasts I would like to try, and a pancake syrup recipe, as well, but I will get to is eventually. 🙂 Everyday is a work in progress and it’s nice to make meals that people enjoy and that aren’t as hard to do (though that chocolate mint truffle was one of the longest of them, just to warn you)!
